Doused with rich mayonnasie, condensed milk, orange juice and lime juice mixture, these butter pan-fried spare ribs is bursting with buttery flavors. The dish is topped with chopped coriander leaves which is perfectly complements the rich flavors of the spare ribs. For those on a tight purse string but wish to satiate your craving for sumptuous meal, why not recreate a fine-dining experience at home and indulge in this no-frills, stripped down, simple home-cooked fare instead? It may not knock your socks off or promise an extravagant dining experience as exactly what you have in a cozy restaurant, but for me, sometimes enjoying culinary adventures at our own abode and serving our love one is more fulfilling and satisfying, at least, the dish is cooked with heart and soul.

Here's the how-to recipe for spare ribs in mayonnaise (鲜果排骨) to step you through.

Ingredients :
1 spare ribs (400g) (排骨)
1 orange (peeled, diced) (鲜橙,去皮,切粒)
1 small stalk coriander, chopped (芫茜)
1/2 tbsp butter (牛油)

Seasoning :
6 tbsp mayonnaise (美乃滋)
1/2 tbsp condensed milk (甜奶)
1 tbsp orange juice (橙汁)
1/2 tbsp lime juice (酸柑汁)

Marinade :
A pinch of salt
1/2 tbsp sugar
1 tbsp flour
1 egg
2 tbsp water
2 pips garlic, minced

Method :

1. Clean well spare ribs, chop into pieces and put into a big bowl. Add in marinade and mix well, let them stand in fridge for 3 hours.

2. Heat up wok, add in butter, cook till melts. Pan fry both sides of spare rib over low heat till cooked. Remove for later use.

3. Mix well all seasoning with orange and pour over cooked spare ribs. Sprinkle with coriander leaves and serve.

Deep-fried Fish Fillets in Breadcrumbs with Basil and Lemon MayonnaiseWith dory fillet and basil leaves in fridge, I scoured the world wide web combining these ingredients and eventually this online recipe in delicious magazine caught my eyes. It was well enough for a Friday night dinner, but did little to help me turn last week's languishing basil leaves into something better. 

In contrast to crispy brown breadcrumbs coating outside, the fork-tendered dory fillets were juicy and succulent inside. This entree is not the unusual dish that I'd like to rave and rant about, but the mayonnaise-based dipping sauce which flavors is perked up by lemon zest, fresh basil leaves and lemon juice. The chopped basil leaves interspersed within infuse a hint of pungent flavor which complement well with the intense citrus flavor of the lemon zest.

Ingredients :

800g dory fillet, sliced into bite-sized pieces (alternatively you can use skinned plaice, lemon sole, flounder, megrim, witch sole or dab fillets)
50g plain flour
2 large eggs, beaten
100g breadcrumbs
30g finely grated Parmesan
1 tsp fresh red chilli pepper (cayenne pepper), chopped
Lemon wedges
Sunflower oil, for deep-frying

For the dipping sauce :
6 tbsp mayonnaise
2 tsp fresh lemon juice
1 tsp finely grated lemon zest (the rich outermost part of the rind of a lemon)
25 fresh basil leaves, finely shredded

Method  :

1. Start off with grating lemon zest (the outermost part of the rind) using a grater. Before zesting, scrub the lemon with a sponge and warm water. Rinse it well and dry it with a paper towel. To zest with fine-toothed grater, just rub the lemon in one direction against the little blades and turn the lemon as you go so that you remove only the yellow part. Carefully zest the lemon leaving the pith (a white, fibrous membrane directly below the zest) on the lemon. This is due to the white pith will give a bitter undertaste.

Mix the dipping sauce ingredients together and season to taste. Cover and chill.

2. To prepare dory fillets' coating,
(i) In a plate, put the flour and set aside.
(ii) In a second shallow plate, pour in the beaten eggs.
(iii) In a third large mixing plate, mix the breadcrumbs, Parmesan, chopped red chilli pepper (cayenne pepper) and a pinch of salt, stir well.

Coat each dory fillet on both sides, one at a time, first in the flour, then the beaten eggs and finally the breadcrumbs (as below sequence, from left to right).

3. Half-fill a large, deep skillet with sunflower oil and heat up to 190C (To test it, add a cube of bread to the oil. At the right temperature, it will brown in 30 seconds).

4. Deep-fry two pieces of coated dory fillet at a time for two minutes until they turn crispy and golden. Drain on plenty of kitchen paper towels to discard excess oil.

5. Serve hot with the prepared mayonnaise-based dipping sauce and white steamed rice.

Fried Chicken with Spicy Mayonnaise Homecooked Recipe

Fried chicken with spicy mayonnaise, as its name suggests, is a very typical affair, and you can pretty much figure out what I did by just judging from its name or looking at the plate. Fried chicken is dressed in a mix of savory and sweet sauce from thick, creamy, golden-hued mayonnaise, tomato sauce, chilli sauce, lime juice and sugar. A smear of this garlicky spread transported the ordinary fried chicken into something spectacular and lift the dish to the next level. It's a perfect balance of flavors and an utter delight to the taste buds.

Ingredients :
2 chicken thighs, cut into pieces
5 cups oil for deep-frying

Marinade :
1 egg
1/2 tsp salt
1 tbsp corn flour (粟粉)
1 tbsp plain flour

Sauce Mixture :
4 tbsp mayonnaise (美奶滋)
1 tbsp tomato sauce (番茄酱)
2 tbsp chilli sauce (辣椒酱)
1 tsp sugar
1 tsp lime juice (酸柑汁)

Method :

1. Combine chicken with marinade and marinate for 30 minutes. Deep-fry in hot oil until golden brown and cooked. Dish up and drain with paper towels.

2. Heat up 1 tbsp oil in a heavy skillet, sauce mixture and chicken are poured into the skillet, toss and mix well. Dish up and ready to serve.
